So a while ago I received this exciting package from my good friend Anna over at Protein Pow.
Anna was one of the first on the scene in Protein baking and someone I learnt a lot from over the years (and had a lot of fun baking experiments with too). To see how much Protein Pow has grown is amazing, and the fact she has her own range of products is super exciting!
This is the Vegan Protein Cooking mix and contains just 5 ingredients: Pea protein, gluten free oats, coconut flour, coconut sugar and vanilla beans – Perfect for making simple recipes! She also has a whey based cooking mix, however they are both good for different purposes.
I decided to crack on with brownies, and adding a few extra ingredients, I got to work.
Chickpeas work great in baking to provide moisture and extra protein and fiber.
I also used the chickpea water as the egg to help it bind… Yep. Chickpea water.
It is known as aquafaba and if you whip it in a food processor, it fluffs like egg whites! You can make meringues, mousse and even macaroons with it – yet most people pour it down the sink!
Once the batter was mix, I swirled in a final bit of the Nuts’N’More peanut butter powder for the pattern and let it bake.
They turned out gooey, fudgey and packed with goodness! Having these microwaved for 20 seconds topped with more peanut butter takes this to another level, but I was so pleased how they turned out!
